Language settings

I often write documents in languages of than English. Is it possible to have English as the default language for new documents, but also have the ability to assign a language other than English that will apply to only that document...and maintain that setting if I close and then reopen the document?

Thank you for your post. Yes, you can change language of selected text by clicking on ribbon command Review | group Spelling | Change language dropdown.
