Highlighting Text

I know how to highlight text. But if I highlight the last word I type, clicking on "no highlight" doesn't stop future words also being highlighted. I've tried double clicking. What am I missing - probably something simple so apologies.

You should consider the highlight tool as a real-life highlighter: it only marks whatever you apply it to.
Type some words, then click the highlighter and then select the text you wish to highlight.
If you then wish to remove the highlight from a word, select the highlighter and then apply it to that word, by selecting it.
