I would like to crop/resize a pdf of a scanned book. The problem is that I would like to remove all the blank spaces around and shrink the page to the size of the text. The problem is that when I want to resize the page without applying to its content, it will zoom to its center and I loose the top part. Is there anyway I can redimension the page and adjust the cropping so that I will not loose any part of the text ?

How are you cropping? I just cropped a sample page from 6" x 9" with wide margins down to 5" x 7", reducing the margins and preserving the text. The new top margin remains as I set it in the crop.
The title of your post says "cropping" but the text says you resized the page. If you resized rather than cropped, perhaps you should try using the cropping tool.
