Have you enabled fractional scaling? This feature is known to cause X11 apps to appear blurry in Wayland.

I've tested the touchscreen behavior only in Cinnamon (on two laptops with Mint 21 and recent Mint 22), and scrolling doesn't work. As far as I know, the Cinnamon desktop environment (DE) does not have good touchscreen support. Have you considered trying a different distribution or desktop environm...

I'm using SoftMaker Office 2024 on Fedora Linux Workstation 41, and I recently noticed that I can't zoom in on documents using the touchpad gesture.
